
Yatu’s Bakery has kindly shared a delicious recipe for you all to make. See below the recipe details for a yummy Blueberry, Lemon and Lavender Galette.
Ingredients:
Tart Dough
- 340g plain flour
- 120g cold diced butter
- 120g caster sugar
- 2 eggs
- 1 egg yolk
- 1/2 teaspoon lavender (ground to make powder)
- 1 lemon zest
Filling
- 300g blueberry (fresh)
- 100g caster sugar
- 1tsp cornflour
- 1 lemon zest & juice
- 1/2 teaspoon lavender (ground to make powder)
Prebake
- 1 egg yolk
- Demerara sugar
Method:
- Add flour, butter, lavender and lemon zest into a bowl or stand mixer and either; flake by hand until sand consistency or by using the paddle attachment on your mixer mix on a slow speed, until it reaches the same consistency.
- Mix together eggs and yolk and slowly add to flour mix while on a slow speed. Mix on medium speed until dough forms into a ball and sides are clean.
- Shape the dough ball by flattening slightly, clingfilm and rest in the fridge for 1 hour.
- In the meantime, mix all ingredients for the filling and set aside.
- Once the dough has rested, roll out the dough into a circle about 1/2 inch thick and place filling mix in the middle, leaving a wide border for folding over. Fold over dough border overlapping it slightly, brush with egg yolk and sprinkle demerara sugar.
- Bake for 15-20 minutes at 180C.
- Serve warm or at room temp.
